These easy loaded breakfast burritos are perfect for when you’re looking for a fast and healthy breakfast recipe to try out!

I don’t know about you, but breakfast food is my favorite kind of food, and I totally love having (and making) those delicious looking breakfast burritos you’d find on your Instagram feed. Bonus points if they’re easy to make. 

And guess what? I actually have just that up my sleeve- an incredibly easy loaded breakfast burrito that you can whip up in minutes.

I am also going to show you how you can turn this recipe into a freezer breakfast burrito recipe in a matter of minutes. That way you can have an easy, convenient meal ready anytime you get ready.

But before you get all ready to make it, here’s what you need to know to make sure you nail the recipe! 

What You Need To Make Make Ahead Breakfast Burritos

Tortillas

Ground Sausage

Second Protein of your choice (think ham, ground chicken bacon, etc)

Chopped red or gold potatoes

Red onion

Bell peppers- grab all the colors, red, green and yellow!

Eggs

Cheese

We will also be using basic seasonings or things you have on hand!

Salt, pepper, garlic powder and italian seasoning are what we are using here.

How To Make Freezer Breakfast Burritos  

Grab your skillet and melt the butter and olive oil over medium heat.

Add the potatoes in first and then the onions and peppers.

Prepare the proteins you chose( meat) and set aside.

Save the eggs for last! Scramble them and season with salt and pepper.

Now we are ready to assemble these loaded breakfast burritos. 

Add eggs to the center of your tortilla, mash and spread them with the back of a spoon.

Top with meat, potatoes, veggies, and cheese. 

Roll your burrito. Serve and enjoy immediately OR get ready to freeze these!

Why Do My Burritos Turn Soggy?

If you’ve tried making burritos before and they turned out to be a big, soggy mess, I feel you. There’s actually quite a lot you can do to keep this loaded breakfast burrito from getting soggy. 

First, make sure that all your ingredients are at room temperature. Also remember to roll your burrito tightly to keep out the moisture. 

The best way to do this is to first roll it in plastic wrap and then in aluminium foil. To make the tortilla crisper, you can heat it in a pan or the toaster or even in your oven. 

Can I Make These Breakfast Burritos in a Veggie Version?

If you’re a vegetarian and want to try a vegetarian version of a breakfast burrito, you could do that too. 

For these, you’ll need to include ingredients like pinto beans, hash browns and a ton of veggies like onions, tomatoes, cucumber, avocado, bell peppers, cabbage and even corn. And of course, there’s tofu as well! 

Remember to season it well (add a dash of hot sauce if you must), throw in some chopped herbs, and squeeze some lemon juice to finish it up. 

You might come across some recipes and versions that might contain olives, potatoes and even spinach.

Can I Make & Freeze These?

Freezing something like burritos may seem counterintuitive, but trust me on this, it is actually not! 

All you need to do is be careful about how you pack it, and you’ll be good. Start by rolling the burrito tightly and then wrapping it in a plastic wrap, followed by aluminium foil, as I mentioned earlier. 

Once that’s done, you can place it in an airtight, freezer safe container and pop it in the freezer. It should stay good there for up to 6 months.

Breakfast Burritos

These loaded breakfast burritos are quick and easy to make for breakfast or even freeze for later. Warm tortillas loaded with eggs, potatoes, sausage, cheese and peppers. Seasoned to perfection!

Course Breakfast

Ingredients
  

  • tortillas
  • 14 oz ground sausage
  • second protein (i.e. ham, bacon, chicken)
  • 2 cups chopped red or gold potatoes
  • ½ cup purple onion
  • ½ cup red, green and yellow diced bell peppers
  • 6-8 eggs
  • ½ tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups shredded cheese
  • 2 tbsp butter
  • 2 tbsp olive oil

Instructions
 

  • Melt the butter with olive oil over medium heat. Add potatoes and cook about 7-8 minutes before adding onions and peppers. Season lightly with salt and pepper and italian seasoning. Cook for an additional 3-4 minutes. Remove from heat and set aside.
  • Cook your meat, drain and set aside.
  • Scramble eggs and season with salt and pepper.
  • Lay out one of the tortillas on a flat suface, add eggs to the center. Mash down with the back of a spoon.
  • Add your protiens, potatoes and veggies and top with cheese.
  • Roll burrito tightly.
  • Serve immediately or wrap for freezer.

Notes

Make sure to label the bag with the date and the contents of the burritos.
When warming up after frozen, it is best to let defrost in the fridge the night before but if you forget, remove it from plastic wrap. Wet a paper towel, wrap it around the frozen burrito, and microwave for 1 min.
