Today is a great day for chocolate! Well, that statement is true for any day. If you are a chocolate Connoisseur like me, this is the perfect smores cupcake recipe to serve at your upcoming event or just to share with your family. Also, who doesn’t love cupcakes? Who doesn’t love S’mores? Today we have the opportunity to put the two together with this delectable delight.
I first had the pleasure of tasting these sweet treats at an office Christmas party at my job. After the first bite, I HAD to find which coworker brought them and try the smores cupcake recipe. These are guaranteed to be a hit!
Graham Cracker Cupcake
The thing about smores cupcakes is that they have that oh so tasty buttery graham cracker crust. It’s a sweet crunchy crust that almost makes you feel like you’re having two treats in one. Up until I tried these, I’d never had a cupcake with a crust.
These cupcakes have a simple graham cracker crust, made with crushed graham crackers, butter and sugar. The graham cracker crust is covered with a super moist chocolate cupcake and then topped with a gooey marshmallow!
When you're making this graham cracker crust, be sure that the mixture is not oily. If you find that you have standing butter in your mix, add more crushed graham crackers a little at a time until it is not oily.
Of course, there is a variation on the recipe that calls for using teddy grahams, which might be a fun twist if you’re making them for or with your kids.
You can just stick a teddy graham in the top of the of your cupcake in that gooey marshmallow!
Marshmallow Fluff? To Use or Not To Use
There are some smores cupcake recipes that call for using marshmallow fluff. In my opinion, it is best used as a filling, not as icing. It is hard to use as icing simply on it's own because it doesn’t exactly get stiff enough to make a pretty topping. Since we are going for quick and easy here, you can make this step optional.
There’s a lot going on with these cupcakes, from the graham crackers to the decadent chocolate cupcake so don’t worry if you don’t decide to use the marshmallow fluff, it’s still topped with a melted marshmallow so you don’t miss any of the flavors.
Smores Cupcake With Cake Mix
Can you make smores cupcakes with box cake mix? Absolutely! This makes the base of the dessert easier and you can use your favorite box cake mix. I am using Betty Crocker’s Delights Super Moist Triple Chocolate Fudge cake mix. The only extra thing we will be adding to this cake mix is 2tsp of vanilla.
If you’re thinking of making Smores in a cupcake pan, why not add the actual cupcake portion itself?!
Now there is a such thing as a smores cupcake mix, but the cake mix was not available in any of the big grocery stores in my area or amazon. Using your favorite store bought chocolate cake mix will work fine too!

For a Sweeter Treat
For a sweeter cupcake, you can always add chocolate or vanilla frosting with mini marshmallows.
To do this, you would need to add toasted marshmallows after icing your cupcakes with chocolate or vanilla frosting.

Arrange the marshmallows in a single layer on a baking sheet and place in the oven on broil until they reach the desired level of toastiness. Then top the icing with your toasty marshmallows!
How To Store and Reheat
If your cupcakes are not for immediate consumption, or you have leftovers (not likely), cover and store them in a plastic bag or airtight container. If you opted to make these without frosting, they don't need to be refrigerated.
When you’re ready to serve them, reheat them in the microwave briefly until the marshmallows soften.
Why are my cupcakes flat?
Overmixing can add too much air to the batter. Just mix the ingredients enough until everything is combined and no more.
Why did my cupcakes overflow?
This is the result of overfilling the cupcake liner. Fill the the liner ¾ full for the best results.
- Handheld or stand mixer
- Standard size baking cups (cupcake liners)
- 12 count cupcake tray
- 5-6 whole graham crackers crushed
- 2 tbsp unsalted butter melted
- 2 tsp granulated sugar
- 1 box chocolate cake mix
- 3 eggs
- 1 cup water
- ¼ cup oil
- 2 tsp vanilla
- 12 large marshmallows
- Melt the butter and crush up graham crackers.
- Mix together in one bowl. (The mixture should NOT be oily, if you have standing butter add more crushed graham crackers).
- Line cupcake trays with cupcake liners.
- Place 1-2 spoonfuls of the crust into each cupcake liner and press it down.
- Make the chocolate cake mix per instructions on the box but add 2 tsps of vanilla.
- Scoop batter on top of crust in each liner. Batter should not be over ¾ full in the liner.
- Bake 15 mins at 350 degrees
- After 15 min place a marshmallow on top of each cupcake and bake for another 4 mins until melted.
- Allow to cool completely.
