Taco Cups with Corn Tortillas

Taco cups made using corn tortillas, filled with seasoned ground beef, your favorite taco toppings and a fresh cilantro lime sour cream.

  • Muffin tins


  • 1 lb ground beef
  • taco seasoning
  • corn tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 1 tomato chopped small
  • 1 cup cilantro chopped fine
  • 1 cup sour cream
  • 1 lime cut into wedges


  • Preheat oven to 400 degrees.
  • Wrap tortillas in a damp paper towel and warm in the microwave for about 15 seconds.
  • Turn one muffin tin upside down and lay one tortilla over each muffin section.
  • Place the second tin on top of the first muffin tin covered in tortillas.
  • Bake the tortillas for 10-15 minutes or until golden brown. Once done, remove from oven and set aside.
  • In a small bowl, mix together the sour cream, cilantro and lime juice from one of the wedges of the lime. Set aside
  • Cook your ground meat with taco seasoning per package instructions.
  • To assemble the taco cups, layer the meat and taco toppings of your choice. Meat, lettuce, tomato, sour cream and cheese. Enjoy!
