Cajun Butter Turkey Quesadillas
A warm, crispy quesadilla filled with shredded turkey tossed in cajun butter, melty cheese and bell peppers topped with cilantro and sour cream. Alternative turkey taco recipe included.
- 2 cups turkey shredded
- 1 cups cheddar cheese shredded
- 4 medium flour tortillas
- 1 medium red bell pepper sliced
- 1 medium yellow bell pepper sliced
- fresh cilantro for garnish
- 1 medium lime cut into wedges
- sour cream as needed
Cajun Butter Sauce
- 4 oz unsalted butter
- 3 bulbs garlic peeled, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp ground black pepper
- ¼ tsp cayenne pepper
For Cajun Butter Sauce
In a mixing bowl, combine garlic powder, onion powder, paprika, ground black pepper, cayenned pepper and mix well.
Heat a skillet on medium high heat, melt unsalted butter then add minced garlic. Saute the garlic until it turns golden brown color, then add the spice mixture.
Stir until everything is combined completely. Remove the skillet from the heat. Set the Cajun sauce aside.
In a skillet over medium high heat, add 1 to 2 tbsp of vegeteble oil. Then add shredded leftover turkey and saute for 1 minute.
Add enough butter Cajun sauce to coat the turkey completely. Turn off the heat. Set the turkey aside.
Place 1 flour tortilla in a non-stick cooking pan over medium heat, no oil. Sprinkle a little bit of shredded cheddar cheese on top of the tortilla.
Then add turkey followed by more shredded cheese and bell pepper.
When the cheese is almost completely melted, use a rubber spatula and carefully flip the edge of the tortilla to fold it over. Press down lightly and cook uncovered for 1 minute or until the tortilla crust becomes crispy.
Transfer it to a cutting board and cut in half. Serve immediately.
For Mini Tacos
Use a cookie cutter to cut a medium flour taco into 3 or 4 mini tacos. Heat them up on a non-stick pan over medium heat or in a microwave.
Add a tiny amount of sour cream on the taco followed by shredded turkey, bell pepper, and garnish with shredded cheese cilantro.
Serve immediately with a side of lime wedge.
